Description
Our Pasture-Raised Pork is hand trimmed and coarsely chopped, and blended with fennel,red wine, garlic, black & white pepper and is dry cured and naturally aged to achieve peak flavor. Unlike traditional salami, it features a much coarser grind, yet it’s prepared much in the same way. Finocchiona is salted and seasoned well before casing, then air dried for preservation. Slice it thin or serve it in chunks – use it anywhere you’d use salami!
Add it to an antipasto or cheese platter, letting the bold, herbaceous flavor shine. This is not the salami for creamy cheeses, but rather strong, intense partners like Pecorino Toscano or an aged cheddar. A glass of hearty, bodacious red wine will be perfectly suited as well. Free of antibiotics, growth promotants, hormones,or animal byproducts. No added nitrates or nitrites.
