Our Pasture-Raised Pork is hand trimmed and coarsely chopped, and blended with white wine,red pepper and is dry cured and naturally aged to achieve peak flavor. Unlike traditional salami, it features a much coarser grind, yet it’s prepared much in the same way. Sopressata is salted and seasoned well before casing, then air dried for preservation. Slice it thin or serve it in chunks – use it anywhere you’d use salami! Sopressata particularly stands out on cheese and meat trays as it pairs nicely with your typical mild cheeses, the natural taste of the meat goes well with a simple cracker and pizza. Our uncured Sopressata has a bold, rich taste that is a timeless Italian classic.
