Our Finnochiona is made with our pasture-raised pork. It has a balance of salt, fennel and creamy pork as well as red wine & garlic.
Add it to an antipasto or cheese platter, letting the bold, herbaceous flavor shine. This is not the salami for creamy cheeses, but rather strong, intense partners like Pecorino Toscano or an aged cheddar. A glass of hearty, bodacious red wine will be perfectly suited as well. Free of antibiotics, growth promotants, hormones,or animal byproducts. No added nitrates or nitrites.
